Eggnog gehört zur amerikanischen Weihnacht einfach dazu, genauso wie Rentiere und Elfen zum Team des Weihnachtsmanns. Ursprünglich kommt dieses Getränk aus England und wurde auch ohne Alkohol getrunken, aber das interessiert hier inzwischen nur noch Minderheiten. Die Zutaten sind Eier, Milch, Zucker, Vanille und Muskat, getrunken wird das Ganze kalt.

Mehrheiten haben bekanntlich mit Minderheiten kein Problem, wenn sich diese den Gepflogenheiten der Masse anpassen (man sieht, das Problem bei dennoch auftretenden Konflikten liegt eindeutig bei den Minderheiten). Also waren wir natürlich hochmotiviert Eggnog auszuprobieren, Neugierde auf alkoholische Getränke ist uns bekanntlich völlig Wesensfremd. Der erste Versuch war gekaufter Eggnog aus dem Supermarkt, der dementsprechend ohne Alkohol auskommen musste. Das schmeckte leider recht künstlich. Unsere Recherche ergab, dass für Eggnog inzwischen gemäß Vorschrift weniger als 0,1% Eiweißanteile notwendig sind. Vermutlich hat ein Lobbyist die Regierung davon überzeugt, dass der Bedarf für traditionellen Eggnog heutzutage die jährliche Welt-Eierernte um das Zehnfache übersteigt und man verhindern muss, dass sich nur noch die Oberschicht Eggnog leisten kann.

Für uns war das Anlass genug, sich selber einmal ans Werk zu machen und einen ersten Versuch zu unternehmen. Natürlich mit Alkohol ;-) Hier unser Rezept:

6 Eier
2 extra Eiweiß
4 Tassen* Vollmilch
3/4 Tasse* Schlagsahne
1/2 Tasse* plus 2 Esslöffel Zucker
1/4 Esslöffel Salz
1 Esslöffel Vanille Extrakt
1/2 Teelöffel gemahlene Muskatnuss
1 Tasse* Bourbon

Tasse*: Ca. 240ml

Obwohl in Kanada das metrische System eingeführt wurde gibt es immer noch häufig Relikte aus der schlechten alten Zeit zu bestaunen. Eine Tasse (Cup) ist umgerechnet etwas weniger als 240ml Flüssigkeit. In Rezepten werden aber auch viele andere Zutaten wie Mehl, Zucker usw. in Cup-Einheiten gemessen, und deswegen ist diese Messgröße einfach nicht wegzudenken. Doch zurück zum Rezept:

Eier, Salz und Zucker solange mixen bis sich der Zucker vollständig aufgelöst hat. Langsam die Milch hinzufügen. Ab damit in einen Topf und 25-30 Minuten vorsichtig erwärmen. Die Flüssigkeit sollte nicht über 70 Grad kommen und am Ende an der Unterseite eines Löffels kleben bleiben. Passt auf, dass das Eiweiß nicht gerinnt!

Runter damit vom Feuer (evtl. geronnenes Eiweiß entfernen), dann Bourbon, Vanille und Muskat dazu. Abdecken und für mindestens 4 Stunden in den Kühlschrank damit. Dann die Sahne steif schlagen, unterheben und genießen.

Bei uns hat das für den ersten Versuch schon recht gut geklappt, auch wenn das Handrührgerät den Eindruck machte, dass es damals bei der Invasion der Normandie erbeutet wurde. Leider war die Masse nicht zähflüssig genug, da wir zu vorsichtig beim erwärmen waren. Dadurch haben sich nicht alle Bestandteile vereint. Aber besser als der Eggnog auf dem Weihnachtsmarkt hat es schon geschmeckt. Viel Spaß beim selber ausprobieren. Wir sind auf Eure Kommentare gespannt!
